If you don't know exactly why you need exhaust springs, it's simply because many off-road motorcycle exhaust pipes are not attached directly to the cylinder, but have a flange that is screwed to the cylinder's exhaust opening with a short protruding piece of pipe.
The exhaust pipe is pushed over this tube and pressed firmly against the cylinder flange by springs. The advantage is that the tube is less likely to break due to vibrations.
